Revamped Holiday Cookbook : " Collard Greens "
These beautiful and healthful, dark, leafy greens. when cooked correctly, makes an excellent side dish and is a great addition to any meal. Though this version is for spicy lovers, peppers may be omitted if you choose.
Note: collard greens are rich in Vitamin K !
Ingredients
• 5 Ibs. collard greens
• 2 tablespoons Extra Virgin Olive Oil
• I large onion (chopped)
• 3 cloves garlic (minced)
• 1 pound smoked turkey
• 2 tablespoons sugar
• Crushed red pepper flakes (to taste)
Instructions
Remove stems from greens. Chop and clean.
Saute onion and garlic in oil.
Stir in water, turkey pepper flakes, sugar. Let simmer 5 minutes Add greens. Cook and cover over low heat 1-1½ hours.
Season to taste
Pop in the oven for bout 25-30 minutes or until golden brown!
Serves: 4-6
