Carnival Cooler: Mango-Coconut Lime Splash is a refreshing tropical drink made with juicy mango, coconut water, fresh lime and a hint of ginger. Naturally sweet and full of bright Caribbean-inspired flavors, it’s the perfect sip for Labor Day weekend.

As Brooklyn gets ready to celebrate Caribbean culture and heritage at the West Indian Day Parade this Labor Day, bring some of the vibrant flavors of the islands to your celebration with this easy-to-make cooler. Whether you’re heading to the parade or celebrating with family and friends at home, pour a glass and toast to culture, community and Caribbean pride!

Ingredients

  • 2 cups fresh or frozen mango chunks
  • 2 cups unsweetened coconut water
  • 1/2 cup fresh lime juice
  • 1 teaspoon freshly grated ginger
  • 1 cup plain sparkling water, chilled
  • 1 cup ice, plus more for serving
  • Fresh mint leaves
  • Lime wedges or mango slices, for garnish

Instructions

Add the mango, coconut water, lime juice, ginger and ice to a blender. Blend until smooth. Pour the mixture into a pitcher and, just before serving, gently stir in the chilled sparkling water for a light fizz. Pour over ice and garnish with fresh mint and a lime wedge or mango slice.
